Story Behind It All

Every celebration felt hollow.


We were all sick all the time.


  • Migraines
  • Vomiting
  • Rashes 
  • Joint pain
  • Lack of vitamin absorption 
  • Hair loss
  • Weight gain (or loss depending on the person) 
  • Malaise
  • Brain fog 
  • Funky body odor (smelled like they were rotting from the inside out)
  • Inability to function beyond the basics. 


Life was difficult to say the least.


At one point, Mary (the mom) was going into anaphylactic shock on a regular basis in front of the children. 


No one talks about what it's like to watch the adult go into shock, only children, and no one prepared them for the post traumatic stress which would come from witnessing their mother on the verge of death multiple times from what appeared to be innocent food. The kids were afraid to let her out of their sight for fear of her dying.


Finally, after many years and many tests it turns out they have hundreds of food allergies and between the four of them above, there are only 3 foods they are all not allergic to! 


Mary has: Celiac Disease, Systemic Nickel Allergy Syndrome, Mastocytosis, Wheat Allergy, Oral Allergy Syndrome and over 100 food sensitivities. 


What does this all mean? She can't eat food with gluten/wheat, nickel, nuts, dairy, histamines or chemicals in or on them. If she does, she can go into anaphylactic shock. Epi-pens are her best friend and she keeps 3 on her at all times.


Sara and Elizabeth have Celiac Disease and Mast Cell Activation Disorder. 


This means they can't eat foods with gluten in them or high histamines or risk going into anaphylactic shock. Sara is so sensitive to gluten that if a dog has eaten dog food with wheat in it and kisses her, she will be seriously sick for days on end. 

Elizabeth gets gluten ataxia, meaning it causes her brain to swell, and she becomes suicidal and homicidal.


Rich has gluten, sugar and legume sensitivity. This means he gets an upset stomach when he eats gluten and legumes and smells funky when he eats sugar.


As you can see, the Herrington's totally get the severity of what food allergies mean. They live with them every day, with every meal, with every choice. Getting treats to celebrate special occasions stopped over 10 years ago. The only way they have had any treats was if they made them themselves.


They have lived with fear and prejudice of food allergies for years.

One friend even once said: "We'd love to have you over but we don't want to kill you." Luckily, they have been friends since high school and they simply brought their own food and had a wonderful time. 


Their goal with Sara May's Gourmet Chocolates & Teas is to give you the opportunity, and freedom, to enjoy delicious chocolate treats and teas without the fear. 


From their basic dark chocolate bar to their more gourmet herbed bars to the speciality celebration chocolates such as holiday molds, chocolate dipped champagne or wine bottles and unique specialty items, they want you to feel pampered, indulged and excited to be able to have a treat. 


It is said that chocolate was the treat of the God's, it is time to become allergy Gods and Goddesses!
